Firstly for making lollipops, we need to marinate it for 3 to 4 hours before frying. For that, add chicken pieces in a large mixing bowl, then add all the marination masalas mentioned above. (mentioned in the section, lollipop marination). Now keep this in a refrigerator for 3 to 4 hours.

Now let's make the crispy-costing part. For this, in a large bowl add cornflour, maida, ginger-garlic paste, red food colour, baking soda and some salt. (measurements are given in lollipop-coating section, above). You can also add kashmiri red chilli powder if you want to skip the red food colour or you can also add both as I did below. Now give everything a good mix. Then add water and make a semi-liquid batter. Now your lollipop marination and coating both are ready.

Now let's come to the frying part. Heat some oil in a kadai for deep-frying. Coat the lollipops with the batter and fry them well until crisp. Once the oil gets hot, keep the flame low and fry the lollipops for about 10 mins per batch. Repeat the same with the rest of the lollipops. Now keep them aside.

Now lets prepare the gravy. For this lets make the sauce mixture. In a bowl add all the sauces like schezwan sauce, red chilli sauce, green chilli sauce, soya sauce, vinegar, barbecue sauce & tomato ketchup mentioned above (in schezwan gravy section). Mix everything well and keep it aside. For making cornflour slurry, add half cup of water and 2 tbsp cornflour. Mix it well and keep this aside too.

Now heat a pan; add 2 tbsp of oil. Then add finely chopped garlic, finely chopped ginger, slit green chillies and some chopped spring onions. Saute them for about 2 mins, until the raw smell goes off.

Then add the sauce mixture in it. (mentioned in step 4). Give everything a good mix. Then add some warm water, add sugar & mix it. Then finally add the cornflour slurry which we have prepared earlier, in step 4. Now check the salt.

Then add the fried chicken lollipops in it. Cook it for about 2 mins on medium flame. Lastly sprinkle some chopped spring onions.

Serve it hot as a starter or with some chinese fried rice.
