I made some boiled chicken and wanted to use the leftover soup for a light dish so I decided to make some pho. It's just flavoured simply with fish sauce. The taste may be simple but it's also delicious.

Ingredients

2 servings
  1. 800 mlChicken soup
  2. 150 gramsPho noodles
  3. 100 gramsBeef for shabu-shabu
  4. 1/2 bagBean sprouts
  5. 1/4Onion (red if you have it)
  6. 1heaping tablespoon Fish sauce
  7. 1Shredded Japanese leek or coriander (garnish)
  8. 1Limes

Cooking Instructions

  1. 1

    Boil some water in a pan and boil the bean sprouts, beef (skim off the fat) and pho noodles in that order. (You can use the same water.)

  2. 2

    Season the soup with fish sauce then pepper and salt if it needs it.

  3. 3

    Add all of the pho ingredients to a bowl and pour the chicken soup over them. Top with garnish and a squeeze of lime juice and it's ready to serve.
