Microwaved Steamed Carrot Bread

I had half an egg leftover from making my daughter's dinner. So I came up with a snack to use it up. This is safe for children to eat and is low in butter, plus it contains vegetables.
Adjust the cooking time based on your microwave.
You can also make this using 3-4 muffin cups. In that case, fill them up with batter about 50-60% and microwave for 1 1/2 minutes at 600 W uncovered. Make sure to check on them.

Microwaved Steamed Carrot Bread

Cooking Instructions

Add the ★ ingredients to the silicone steamer. Microwave uncovered for 50 seconds at 600 W to melt the butter.

Add the remaining ingredients to Step 1. Use a spatula to mix and smooth out the surface.

Close the lid and microwave at 600 W for 1.5 - 2 minutes. Once an inserted skewer comes out clean, it'd done. Let sit as is for 2 minutes.

It's fluffy and finished! I used a 15 cm diameter silicone steamer. To remove from the steamer, insert a skewer between the cake and steamer and move it around the edges. Use a spatula to remove from the bottom gently.

If you won't be eating it right away, wrap it with plastic wrap while still warm and let sit to keep it fluffy.

This is perfect for little kids who can hold their own food Adults can enjoy it too ! This amount is perfect for 3-4 people.
