Steamed Vegetable Bread

I tried making steamed bread with my favourite brand of vegetable juice.
The vegetable juice gives the bread a lovely colour!

Cooking Instructions

Heat up the steamer. Put aluminium (or paper) cupcake liners in the cupcake mould.

Beat the egg in a bowl, add the vegetable juice and mix.

Add the pancake mix and cut and fold it in with a rubber spatula.

Pour the mixture into the cupcake mould until about 70% full.

Place into the steamer and steam for 10 - 15 minutes. When a skewer poked through the middle comes out clean, they are done.

These are mildly sweet and contain a lot of vegetable juice, so you can have them for breakfast or lunch. They are great for kids' meals or snacks! My son loves them.

You can keep these in the freezer, so make a lot, wrap each one individually, and put in the freezer. Let them defrost at room temperature when you want to eat them.
