You will rarely see quince fruits on sale in shops. They generally come into season in October/November. Although they can be eaten raw, they are better cooked. The Portuguese generally tend to make quince marmalade. I didn't really measure the ingredients in this recipe so I have estimated my measurements.

Ingredients

  1. 3large Quinces, quartered
  2. 3 tbspsugar
  3. 2 tbsphoney
  4. 1/2orange peel
  5. 1/2lemon peel
  6. 1vanilla bean
  7. 1.5 litrewater

Steps

  1. 1

    Add all the ingredients into a saucepan.

  2. 2

    Make sure the lid is tightly on to avoid steam escaping.

  3. 3

    On a gentle simmer bring to the boil and cook for 35-40 minutes.

  4. 4

    Eat the cooked fruit with ice cream or whipped cream.

  5. 5

    Save the liquid to sweeten or drinks, it goes great with champagne.
