I love #herbs and grow lots if varieties in my garden. These are one of my useful things in the freezer! I simply pop some good bread in the blender with some fresh herbs from the garden, blitz to breadcrumbs and use or freeze. This is a great zero waste/use up recipe as they work better with bread that is a little stale and they last for ages in the freezer. These were made with sage and are destined for sage and onion stuffing, but they also make a great for a topping for vegan Mac and Cheese or any bake in the oven dish and for homemade vegan burgers and balls. Break the bread into chunks and pop in a food processor. If you haven’t got one it’s possible to chop the herbs and bash the bread in a paper bag with a rolling pin, but it would need to be stale and a crumbly bread.

Blitz the bread for a minute until crumbly. Wash and dry the herbs and add to the processor. Blitz until the herbs are finely chopped. Use or freeze immediately. I add to over fishes straight from frozen.
