I just remembered it's been long I made Plantain Fritata this prompted me to make this one
Steps

Peel and cut your plantains into round shapes. Heat your oil and fry until golden brown. Keep aside

In a sauce pan, heat 1 cooking spoon of oil,

Add your onion and saute for 30seconds.

Add your Tomatoes, shombo and stir fry for 3 minutes.

Add your carrots, green pepper and green beans, salt, knorr cube and Stir fry everything together for 1 minute.

Keep the mixture aside to cool a bit

Add a pinch of salt and beat very well.

Add the tomato and veggie mixture and finally add your fried plantain. Mix everything together.

Pour the mixture. Place on a medium heat,

Cover tightly and allow to cook for 10 to 15 minutes or insert a tooth pick to check if it's well cooked. You can also bake it if you don't want to fry it.

In a large bowl, break and beat your egg.

In a non-stick pan, add one cooking spoon of oil.

Serve hot with pap, oat, custard, rice or eaten alone 😋😋😋😋
