Easy Daikon Namul

When my children were young, they thought that the daikon namul (sweet and sour flavour) in bibimbap was too sour, so I came up with this one. They still love bibimbap with both this namul and sweet and sour namul.

The trick is cooking the daikon radish. The amount of water that daikon radishes release differs, so be careful not to burn it. To cook it so that it's soft, add some water midway through cooking, place a lid on top and steam it. Crispy daikon radish is also delicious. Recipe by Heartful Kitchen Rei.

Ingredients

2 servings
  • 15 cmDaikon radish
  • 1 cloveGarlic (grated)
  • 2/3 tspBeef stock (dashida)
  • 1 pinchSugar
  • 1 dashSalt
  • 1 dashPepper
  • 2 tspSesame oil
  • 1 tbspToasted sesame seeds
  • 3 tbspWater (if needed)

Steps

    Peel the daikon radish, and julienne it with a vegetable slicer.

    Heat a frying pan, and cook the daikon radish in the sesame oil. Once the daikon radish has wilted, season with the garlic, beef stock, pepper, salt and a pinch of sugar.

    Cook the daikon radish to your liking. Namul with a crispy-crunchy texture is delicious, but so is soft namul.

    Once it's finished frying, turn off the heat, and sprinkle over the toasted sesame seeds to finish. This is delicious served in bibimbap!
