Ingredients

Serves 5-6 servings
  • 1 cupbasmati rice (about 200 grams)
  • 1/4 cupghee (about 60 ml)
  • 1/2 cupsugar (about 100 grams)
  • 5-6whole cloves
  • 2-3green cardamom pods
  • 1 teaspooncardamom powder
  • 1/4 teaspoonsaffron
  • 1 teaspoonraisins
  • 8-10almonds
  • 1 teaspoonchopped pistachios
  • 8-10cashews
  • 1 pinchturmeric
  • as neededWater

    Soak the rice in water for 20-25 minutes. Soak the saffron in 1/4 cup (60 ml) warm milk for 15-20 minutes. In a pot, bring enough water to a boil for the rice and add a pinch of turmeric. Once the water is boiling, add the rice. When the rice is more than halfway cooked, drain it in a strainer to remove excess water.

    In another pot, heat the ghee over medium heat. Add the cloves and green cardamom, then add some of the almonds, cashews, and raisins. Sauté for 1 minute. Add the sugar and 1/2 cup (120 ml) water, and bring to a boil. Pour in half of the saffron milk, then add the cooked rice and mix well. Cook the rice for 2 minutes, then turn off the heat.

    Pour the remaining saffron milk and sprinkle the chopped pistachios on top. Mix gently. The Kesariya Bhaat, rich with saffron, cloves, cardamom, and dry fruits, is ready. It smells wonderful and is a delicious traditional sweet dish. Garnish and serve as you like, and enjoy with family and friends.
