Mille-Feuille Tonkatsu with Sesame Miso Sauce

I cooked soft tonkatsu, and it was more delicious than I had imagined, so my family stuck with this recipe.
If you so happen to buy meat that is too lean, then you can stick in sliced beef fat between the meat, and it will turn out nicely. My family always keep beef fat in the freezer. Recipe by Mirunesan

Steps
- 1
Spread out the meat, and stack together. Once you have stacked 6 slices per serving, sprinkle the back with salt and pepper, and rub it in by hand.
- 2
It will stick together even when stacked this thick, so there's no need to worry.
- 3
Thoroughly coat the meat with flour, eggs, and panko in that order. Make sure to coat the edges as well.
- 4
Fry them up until golden brown in 340°F/170°C oil, and they are done.
- 5
Place the sesame-miso sauce into a microwave-safe container, mix, and microwave at 600 W for 20 seconds. Take it out, mix it again, repeat 3 times, and it is done.
- 6
The miso will thicken if you over-microwave the sauce, so be careful. You can reduce the amount of sugar for those of you that prefer a more moderate sweetness.
