Oh-So-Creamy Marinated Eggs

I love "ajitama" flavored eggs they serve at ramen restaurants so much, I always ask for them! I'm really particular about that soft, creamy texture, so I experimented with the cooking times until I was satisfied.
The cooking time is key.
If you stop the cooking at 6.5 to 7 minutes, and cool the marinade down properly, the yolks will be creamy soft and delicious inside. For 2 servings. Recipe by haruka616.

Cooking Instructions
- 1
Leave the eggs out to bring to room temperature. Bring water to a boil in a small pan. Combine the ◎ ingredients.
- 2
When the water comes to a boil, add the eggs and boil for 6.5 to 7 minutes, or as preferred. Drop the eggs carefully to the pot using a tea strainer or similar so as not to break their shells.
- 3
When the eggs are boiled, cool immediately in cold water. Peel the eggs when they are cool enough to handle. They're the right texture if they feel bouncy but with just enough give.
- 4
Put the ◎ ingredients in the small pan and heat. Dissolve the dashi stock and bring to a boil to make the marinade. Leave to cool.
- 5
Put the eggs in a ziploc bag and add the cooled flavoring sauce. If you put the bag in a deep glass, it's easier to pour in the sauce.
- 6
Leave the eggs to marinate for 1-2 days.
- 7
Turn the bag over occasionally so that the sauce covers all the eggs.
- 8
After two days, your oh-so-creamy soft-set eggs are done!
- 9
Top on a bowl of ramen noodles!

Creamy Soft Marinated Eggs That Keep Creamy Soft Marinated Eggs That Keep
I wanted to eat soft yolk eggs with a strong flavor. Simmered eggs become hard cooked. When I make simmered dishes like buta no kakuni (simmered pork belly) I often use the cooled leftover cooking liquid instead of the marinade here. Cool the cooking liquid down and remove the congealed fat before using as a marinade. The eggs become very rich in flavor, but really delicious. (In this case the eggs won't keep very long since there's no vinegar in the marinade.)7 minute boiled eggs have pretty runny yolks. Please cook the eggs to your desired degree of doneness. The yolk will harden a little while it's marinating. The key to making the eggs last for some time is the vinegar in the marinade. If you don't like the sourness of vinegar, you can soften it a bit by bringing it to a boil once. Recipe by Dosankomisuzu cookpad.japan -

Easy Marinated Eggs, Great For Ramen Easy Marinated Eggs, Great For Ramen
An older classmate of mine taught me how to make these easy marinated eggs. It's really easy, so I wanted everyone to make it and uploaded the recipe.Peeling the eggs in ice water makes it easier. I wanted to make the eggs soft boiled, so I tried boiling them for 7 minutes, but they didn't become firm enough and fell apart. The right timing is less than 8 minutes, about 7 minutes 40 seconds. If you boil the eggs for 8 minutes the eggs will be quite firm and suitable for bentos. You can keep the eggs in the refrigerator for about 3 days. Recipe by Hanano arashi cookpad.japan -

These are handy to have in stock, so I make it when I have a lot of eggs. You can omit the garlic if you're worried about the smell. But do include the green onion. It really adds great flavor.I think the eggs are at their best after 2 days in the marinade. The marinade will have penetrated the yolks and turned them a bright orange, so they're really yummy. For 4 to 5 eggs. Recipe by Madamusen cookpad.japan -
Marinated Eggs (Korean Mayak Marinade 마약계란) Marinated Eggs (Korean Mayak Marinade 마약계란)
This is soft boiled eggs marinated in a mayak sauce also known as "drug eggs" because of how addicting the sauce is. It's sweet, spicy, umami, garlicky, and balanced. You can also use this marinade/sauce for tofu, dumplings, or even noodles! The base of my sauce recipe is perfectly balanced, I would just change the ratio of jalapeños/peppers used depending on your spice tolerance! If you don't like sesame seeds, you can sub that out.Note: The eggs do get firmer in the marinade due to the salt and sugar content. It's similar to a gentle curing process. If you want the yolk to stay soft, I would marinate it no longer than 6 hours. Longer than that, the yolk turns jammy and fudgy like the photo in my last step.If you like things extra spicy, I would add in some Thai chilis!#koreanmarinatedeggs #marinatedeggs #eggs jc.eeats -

Soft-Boiled Eggs (Marinated) for Your Ramen Noodles Soft-Boiled Eggs (Marinated) for Your Ramen Noodles
I created these eggs as a complement to ramen. The marinade is on the strong side. If you can drink it, it's too thin. After two days, the eggs will become too salty, so I recommend taking them out of the marinade after 24 hours. I use the left-over marinade to make more eggs (to go with my next dish of ramen).
