Pastry Ingredients / About 25g each (makes about 24-26 pieces)

Place all ingredients in a bowl (except butter). Add cake flour first, then milk powder, milk, and sugar. Finally, add the egg. Mix with a mixer for 1-2 minutes until combined. Add small pieces of room temperature butter. Mix for 5-6 minutes until the butter is slightly grainy.

Use your hands to rub the butter into a powder, then knead into a dough.

Place the dough in a plastic bag and refrigerate for 20 minutes.

Take the dough out of the fridge and divide it into pieces about 25g each. Roll each piece into a ball. You can refrigerate half while working with the other half for easier handling.

Divide the pineapple filling into 24 or 26 portions and roll into balls, about 18-20g each. Sprinkle some flour on your hands for easier handling.

Take a piece of pastry, flatten it, and wrap it around a ball of pineapple filling, sealing it tightly.

Shape it slightly into an oval.

Place it in the pineapple mold and press to shape. Gently push down to release the pineapple cake.

Bake the pineapple cakes in two batches. Keep the other tray in the fridge. Preheat the air fryer oven to 180°C (356°F) for 5 minutes.

Place in the middle rack. Bake at 180°C (356°F) for 10 minutes, then flip and bake for another 8-10 minutes.

Remove the baked pineapple cakes and let them cool.
