For some random reason, I have been craving mussels. So after, going to a restaurant and trying good but not great mussels I decided to make them myself. With left over homemade tomato soup
And it hit the spot. My only regret is that I didnt make a double portion 😜

Ingredients

15 min

1 serving

400 gWashed and debearded fresh mussels
100 mlpinot grigio (but any white wine will do)
300 mltomato soup (check out my recipe)
50 gfeta cheese

Heat up the tomato sauce and wine for 5 minutes

Add the feta and mix it in.

Add the mussels and simmer for 3-5 minutes till all the mussels open up

And serve. Add lemon to taste (I forgot)
