A simple way to use filo pastry which will be ready in 15 minutes. If you can’t get hold of filo pastry you can use shortcrust instead and can make tartlets too.

A simple way to use filo pastry which will be ready in 15 minutes. If you can’t get hold of filo pastry you can use shortcrust instead and can make tartlets too.

For the pastry case: start by covering the tin with butter and layer the filo pastry one by one alternating with melted butter. Trim some of the excess, but fold the rest over to create a rim.

For the filling:
Cream the feta helping yourself by adding the yogurt a little at the time. When is of a smooth consistency add your honey, vanilla and ricotta and fully combine until a thick cream. - 3
Assemble:
Place the cream in the case and spread evenly, place the slices in figs and bake for 15 minutes in a preheated oven on gas mark 6.
To serve: Sprinkle the remaining feta, pine nuts some rose petals and a touch of gold leaves if you wish
