Red Cabbage has 8 times more Vitamin C than regular white cabbage which makes it one of the top Vitamin C foods in the world. Vitamin C is a wonderful thing to have on-board to stay healthy in the winter months. Cabbage can also help reduce chronic inflammation (helps with arthritis), and is rich in Vitamin K (improves bone density). This crispy, light and fruity cabbage and apple salad makes a lovely side menu.

Ingredients

10 minutes
4 people
  • 2lettuce leaves
  • 1red apple sliced
  • 1cucumber
  • 1carrot
  • 100 gmred cabbage
  • 1 sprigparsley leaves
  • 1/2 tsplemon juice
  • Dressing
  • 1/4 cupolive oil
  • 2 tbspDijon mustard
  • 2 tbspwhite vinegar

Steps

10 minutes
  1. 1

    To make dressing, whisk all ingredients in a small jug until combined.

    Cut lettuce crossways.Transfer to a large bowl. Place apple in a small bowl. Add juice. Toss to coat.

  3. 3

    Add carrot, red cabbage, cucumber.Drizzle with dressing. Sprinkle chopped parsley.Toss to combine.

  4. 4

    Transfer to serving dish. Chill for few minutes.Toss with dressing only before serving
