Vitamin C is a wonderful thing to have on-board to stay healthy in the winter months. Cabbage can also help reduce chronic inflammation (helps with arthritis), and is rich in Vitamin K (improves bone density). This crispy, light and fruity cabbage and apple salad makes a lovely side menu.

To make dressing, whisk all ingredients in a small jug until combined.

Cut lettuce crossways.Transfer to a large bowl. Place apple in a small bowl. Add juice. Toss to coat.

Add carrot, red cabbage, cucumber.Drizzle with dressing. Sprinkle chopped parsley.Toss to combine.

Transfer to serving dish. Chill for few minutes.Toss with dressing only before serving
