Seen a recipe in one of my favourite celeb chefs cook book. I have done my own twist on it. This is nice finger food. 😉

Steps
- 1
Stir together the flaky sea salt. coriander, black pepper, oregano, bay leaf and garlic. Mix into a paste with the veg oil.
- 2
Cover a chopping board with a sheet of cling film and place the sirloin steaks on top. Place a second peice of cling filmon top and flatten the steaks out with a rolling pin to about 1 cm thick. Remove the cling film and place steaks in mix you made above. Make sure that the steaks get completely covered in the oil and spice mix.
- 3
Heat 2 large frying pans - 1 on high heat and the other on medium heat. When hot, carefully place tge steaks in the pan on high heat and sear for a minute until they start to blacken. Turn them over and add the butter. Cook for a further minute and remove from the pan and rest for a few minutes.
- 4
Meanwhile make the salad. Slice the shallots into thin rings. Place the olive oilin the other pan. Add the shallots and mustard seeds. Cook for a couple of minutes until shallots start to soften. Add tge lettuce leaves and stir quickly. As they start to wilt, add the chives and lemon zest. Pour on a large splash of vinegar and season. Remove from the heat and serve with the steaks and some slices of the white baton bread to soak up the juices. Enjoy.
