Sablé Cookies [Lemon, Coffee & Chocolate]

Beat butter, sugar, salt, and eggs until well combined. Divide the mixture into 3 equal portions.

To make lemon cookies: Take the first butter portion and add both flour along with the lemon zest. Mix them well.

Add the chopped pistachios and mix into a cohesive dough. Cover and refrigerate the dough while preparing the other dough.

To make coffee cookies: Take the second butter portion and add both flour. Dilute the instant coffee in hot water, then add it into the butter mixture. Mix them well.

Add chocolate chips and mix into a cohesive dough. Cover and refrigerate the dough while preparing the other dough.

To make chocolate cookies: Take the last butter portion and add both flour along with the cocoa powder. Mix them well.

Add sliced almonds and mix into a cohesive dough. Cover and refrigerate the dough.

Take out the lemon cookie dough from the fridge. Roll it into a log (See the video for how to shape it). Wrap and chill it for 1-2 hours in the freezer. Continue shaping the coffee cookie dough and the chocolate cookie dough, then freeze them as well. (Place the cookie dough on the center of a large parchment paper. Fold the paper over to cover the dough. Then push the cookie bottom with a plastic bench scraper to lengthen the log).

Once chilled, roll each of the cookie dough in granulated sugar to fully coat it. Then cut them into equal portions and place them on a baking tray lined with parchment paper.

Bake them in a preheated oven at 350°F (180°C) for about 15 minutes. Let cool completely on a wire rack.
