This is great for Indian style breakfast or brunch especially on Sundays or any time of the day. Goes well with any types of Roti, Parathas etc.
I had a small Bellpeppers/ Capsicum lying in the fridge so added that too, you can skip it if you don't have.

Ingredients

  1. 9Eggs Boiled
    How to boil a Perfect Hard Boiled Eggs
  2. 1small Capsicum diced
  3. 1-2Whole Dry Chilli pieces
  4. 1/2 TspCummin seeds
  5. 1/4 tspBlack Peppercorns
  6. 2Cloves
  7. 3Onion chopped
  8. as requiredPuree of 2 Tomatoes
  9. 1 TspCoriander Powder
  10. 1 TspKashmiri LAL Mirch powder
  11. 1/4 tspTurmeric powder
  12. as per tasteSalt
  13. 1Small Ginger
  14. 5-6Garlic cloves
  15. 1Fresh Chilli
  16. Dhaba Masala
  17. 1 TbspCummin seeds
  18. 2 TbspsCoriander seeds
  19. 1/2 TbspBlack Peppercorns
  20. 2Black Cardamoms
  21. 2Green Cardamoms
  22. 4-5Cloves
  23. 1small Cinnamon stick
  24. as required Cilantro for Garnishing (optional)

Steps

    If you love fried boiled eggs, make 2-3 slits on the eggs, sprinkle salt and turmeric powder on the egg, apply it evenly. Fry it in hot oil and keep it aside. In the same oil as needed cook the gravy. My family doesn't love it that way so I skip this step otherwise my mom used to fry it.

    Dry roast the whole masalas under Dhaba Masala and cool it, then grind it into powder. In the same mixer grinder jar make the tomato puree too. Make a rough paste of ginger garlic and chillies in Mortar and pestle or mixer grinder if mortar and pestle not available or in grinding stone, no need to make it into fine paste, as it's Dhaba style.

    In the same oil as needed if you are frying the eggs or in 2-3 tbsp hot oil add the whole dry Chilli, Cummin seeds, Black Peppercorns and cloves. Once everything crackles, add the onion and saute it till it becomes pink and translucent, add the ginger garlic chilli paste, saute it for few minutes.

    Add tomato puree and cook till tomatoes are well cooked, add Bellpeppers too and the coriander powder, turmeric and Kashmiri chilli powder and cook further for few more minutes for the spices raw aroma to go. Add little water if needed.

    Add the Dhaba Masala powder and cook for few more minutes. When oil starts seperating,add the fried boiled eggs and mix well, the Masala should be sticking to the eggs as it's Anda Masala, so no need to add water and make a thin consistency gravy.

    Serve hot with Roti, Parathas etc.

Tips

How to boil a Perfect Hard Boiled Eggs

Put eggs in room temperature water in a vessel with a Tsp of Vinegar and cover it and put it on the flame. Once the water starts boiling, put off the flame and let it stand for about 20 minutes covered. This way it doesn't make the yolk look black/ grey, you will get a perfect hard boiled egg with yellow yolk. Take it out of the water and put it in a bowl of chilled ice water, once cooled peel it, the vinegar makes it easy to peel.
