Suji Uttappam or Savoury Pancakes

In this particular variation of Uttappam, I have used Suji or Semolina with Black Gram or Urad Daal just like that of a regular Dosa or Idli batter. But without using Rice as this is Suji Uttappam. The rest is the same. I have fermented the batter overnight and made these soft and supple Uttappams the next day adding a few ingredients directly to the batter. But you can use it right away also by adding a cup of Sour Curd.
They can also be called Savoury Pancakes or Mini Uttappam too. The only thing is that I added Onions, Green Chillies and Coriander along with Salt and Cumin Seeds. That's it. Simple and delicious treat for a healthy Breakfast on any day.
You can use this batter in different ways making different types of healthy Snacks or a complete meal for your families. I have served these with Aloo Masala because I was short of time and couldn't make the Chutney but you can make Coconut Chutney or any other of your choice.

First of all wash and rinse the Lentils thoroughly for about 4-5 times to get rid of all the dirt and the Pesticides. Now soak this Black Gram in enough drinking water for about 4-5 hours. Grind using as little water as possible. Use the same water in which it was soaked and use the remaining water in Curries or for kneading the dough. Don't discard it.

To this add the rest of the ingredients and mix well. It's all ready. You can use this straight away or can use it the next day too if remaining. Refrigerate it and use as desired.

Add a ladleful of the batter to the Multi snack pan in all it's depressions. Drizzle some Oil. Cover and cook on a low heat on both the sides. That's it. You can add any Veggie of your choice.

Serve with Aloo Masala as I did and with any Chutney of your choice as well. Enjoy! Yum!
