Since the festival times are near and so are fasting days, this recipe of Potato and Amaranth flour or Rajgira flour paratha is perfect for your upvas or farali or fasting diet. It gives energy and proteins in fasting days and is delicious too! Enjoy!

First, take all the ingredients in a deep Bowl. Mix well.

Add warm water and slowly bind to a firm dough. Use only enough water in small quantities. Avoid a sticky dough.

Keep covered for 10 minutes. Then heat a tawa. Roll out ball sized portions on a rolling surface.

Roll out to thick Paratha or press director on tawa to make thick roti like flat bread.

Pour 1tsp ghee per Paratha around the sides, cover and cook till crisp on both sides.

Make all the parathas in similar way. Serve immediately with spiced curd, coriander and curd dip, tamarind chutney or peanut and curd chutney. Enjoy your fasting days.
