Makes 1 × 20 cm cake
60 gbutter
1/2 cupcaster sugar
1egg
1 teaspoonimitation vanilla essence
1 cupself-raising flour
1/4 cupmilk
1ripe banana, mashed
200 gShop bought Butter Cream icing

Turn oven to 180 oC (350 oF).Grease well a 20cm ring tin.

Dust all over the inside of tin with a little flour.

Gently melt butter in a big pan. Don't let it boil.

Take off heat and add sugar, egg + vanilla.

Beat it well with a wooden spoon until smooth.

Sift in flour.Don't stir it yet !

Add milk + mashed banana. Stir until just mixed.

Spread evenly in tin.Bake for 30 minutes. Ice cake when cold.

The Buttercream Icing makes the Banana Cake Sponge very sweet and sickly. A set - wet Icing of Icing Sugar and a touch of clean cold water might be better, but is possible to appreciate a small slice .I ate all of it - as a filling meal.
