In a bowl, add 2 cups of water and boil Soya Chunks and mixed spices (cloves, bay leaves, black pepper,star anise, cinnamon) for 10 mins.

Transfer them to a plate and drain the excess water.

In a pan, roast sliced onions, 1 inch ginger,8-10 garlic cloves,1 red chilli, 2 green chillies,1 diced Tomato and dried coconut for 5-10 mins.

Blend them into a fine paste.

Heat oil in a pan and add 1 tbsp coriander powder, 1 tbsp red chilli powder, 1/2 tbsp turmeric powder and 1 tbsp garam masala and mix everything well.

Add blended paste and mix well

Once oil is released, add boiled soya chunks and mixed spices

Add salt as required

Add Soya stock/ water

Cover the lid for 5-10 mins until soya chunks are softened

Add fresh coriander

Serve it hot with rice / roti.
