Memil Jeonbyeong (Buckwheat Crepe) Style Fresh Spring Rolls

The authentic memil jeonbyeong is a chewy buckwheat crepe with namul, kimchi, Korean BBQ meat, cellophane noodles and other fillings, but I made an easy version by wrapping with rice paper wrappers.
It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate in cold water until you get the hang of it. If the rice paper wrappers are too hard to roll, wait a little until the moisture from the ingredients soften the wrapper. It will soon be soft enough to handle. Recipe by Heartful Kitchen Rei

Cooking Instructions
- 1
Julienne the daikon radish and carrot.
- 2
Add the sesame oil and minced garlic to a skillet and turn on the heat.
- 3
Once the garlic is fragrant, add the daikon radish and carrot. Sauté to evaporate the liquid.
- 4
Once the daikon radish is tender, add the beef stock and sauté it. Sprinkle on the pepper and roasted sesame seeds for a finishing touch and spread onto a serving plate to cool.
- 5
Beat the eggs and salt together and make a few paper-thin omelets. Cut the omelets into narrow strips.
- 6
Pass the rice paper wrappers through a bowl of water and spread them onto a cutting board or a large plate. Place the daikon mixture in a long thin row on the rice paper 1/3 of the way from the end closest to you.
- 7
Place the lightly drained kimchi on top of the daikon mixture.
- 8
Wrap the ingredients once with the rice paper wrapper from the closest edge to you, then spread the thinly sliced egg omelet. It's easier to wrap the eggs this way and also it looks beautiful in see though wrapper.
- 9
Instead of wrapping it like fresh spring rolls to seal the both edges, just roll up like memil jeonbyeong.
- 10
Cut into bite-sized or about 4-5 equal pieces. They are delicious as they are, or serve with your favorite dipping sauce.

Fresh Spring Rolls Fresh Spring Rolls
I love fresh spring rolls, so I make them with ingredients that we always have at my house. Using boiled eggs or shrimp turns them into colourful and gorgeous fresh spring rolls. This time I used canned young (mini) corn, but crab-flavoured kamaboko and okra taste delicious and also look beautiful when the spring rolls are sliced in half. It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate them in cold water until you get the hang of it to avoid mistakes. If the rice paper wrappers are still too stiff to roll, wait a little until the moisture from the ingredients soften them. They will soon be soft enough to use. For 10 rolls. Fresh Spring Rolls with Cheese & Cucumber Chikuwa Fresh Spring Rolls with Cheese & Cucumber Chikuwa
Cucumber chikuwa is a great appetizer, and I made it to be more voluminous! You can eat a lot of these spring rolls in place of a salad I stuff chikuwa with whatever I fancy to enjoy various kinds of fresh spring rolls. It's quicker to rehydrate rice paper wrappers in hot water, but they will be difficult to handle if they soften too much. So you won't fail much if you rehydrate them in water until you get used to making fresh spring rolls. If the rice paper wrapper is too hard to roll, it will soften with the moisture from the vegetables, so let them rest for a little. The rice paper wrapper will soon soften enough to roll. Farmhouse Recipe: Fresh Spring Rolls With Mizuna Farmhouse Recipe: Fresh Spring Rolls With Mizuna
Fresh spring roll or rice paper wrappers can be stored for a long time so I usually have some in stock. I vary the fillings depending on the season, but I especially like this combination of mizuna greens and cream cheese, and I always make this recipe for parties. The formal name is "Fresh spring rolls with mizuna and cream cheese".My method of rehydrating the rice paper wrappers is pretty lazy, but I just soak them in lukewarm water for 20 to 30 seconds, put them on a cutting board and immediately wrap the fillings with them. That's it. The wrappers do tend to stick together, so put a little space between each roll when you line them up on the serving plate. Recipe by FarmersK cookpad.japan -

Fresh Spring Rolls with a Delicious Sauce Fresh Spring Rolls with a Delicious Sauce
I love fresh spring rolls but I'm not too fond of sweet chili sauce...so I combined my favorite seasoning ingredients to make this delicious dipping sauce.Even people who don't like vegetables will eat them served like this, so it's a great way to try out all different sorts of vegetables. When rehydrating the wrappers, it's best if you take them out while they are still a bit firm, since the moisture in the wrapped vegetables will soften them some more and make them just right. If they are still too hard try spraying them with water using a mister or spray. You can also try lightly brushing some water on them. Recipe by Taberunba cookpad.japan -
Easy Steamed Chicken and Vegetable Fresh Spring Rolls Easy Steamed Chicken and Vegetable Fresh Spring Rolls
I used high-protein chicken tenders instead of the usual shrimp. My friends really like this. You can wrap anything you like. You don't need the decoratively cut carrots. If you wrap the rolls quite tightly, they are less likely to fall apart. The sake and olive oil make the chicken very tender. Recipe by mini cookpad.japan -
Our Family Recipe For Fresh Spring Rolls and Dipping Sauce Our Family Recipe For Fresh Spring Rolls and Dipping Sauce
I often make fresh spring rolls instead of salad. When I listened to all the requests of my family, this version was the result. The rice paper is simply moistened in water and used to wrap up the fillings, so it's easy. If you aren't going to slice the rolls, tuck the ends in as you roll them and they're less likely to fall apart. There are many ways of rehydrating rice paper, but I just wet it quickly in water. If it's over-soaked it becomes really hard to handle. Any tough bits will quickly soften, so until you get used to wrapping these spring rolls, it may be easier to handle the rice paper while it's still stiff. If you are only wrapping a few rolls, you can just run them under the tap! Recipe by Heartful Kitchen Rei cookpad.japan -

Vietnamese Fresh Spring Rolls with Peanut Sauce Vietnamese Fresh Spring Rolls with Peanut Sauce
The fresh spring rolls I had at a food stall in Vietnam were so tasty that I toyed around with various flavors to come up with the right recipe The sauce is truly delicious.Use your choice of fillings. You don't have to have all of the ingredients. I also recommend filling them with avocado or kimchi. You could also substitute leftover somen noodles for the cellophane noodles. Wrapping the fillings first in the green salad leaves prevents the wrappers from breaking apart while wrapping, and also while eating. Recipe by Tomonchicchi cookpad.japan -
Fresh Spring Rolls with Shrimp Fresh Spring Rolls with Shrimp
I love fresh spring rolls, but they are rather expensive to buy readymade, so I made my own. I can't remember the shock I felt when I tried shiso leaves in them...it was a great match. Since then I've always used shiso leaves in these. The shiso leaves make a big difference, so I definitely recommending including them. The other vegetables can be anything you like. Try out your favorites. You can use canned tuna or ham etc. instead of the shrimp. The last important part of the recipe is the rolling. Just try it several times to get a feel for it. For 7 rolls.
