No celebration here feels complete without something sweet. Today, I made milk-based vermicelli (sevai) for Vijayadashami.

Heat the ghee in a large pan. Add the vermicelli and roast until golden brown. Once browned, pour in 4 1/4 cups milk (1 liter) and mix well. When the milk comes to a boil, place a small spoon in the pan to prevent the vermicelli from sticking to the bottom.

Chop the mixed nuts into small pieces. Stir the vermicelli occasionally as it cooks, until it thickens to your liking.

Once the mixture has thickened, add the sugar or rock sugar and mix well. Add the chopped nuts and cardamom powder. Stir until the sugar is fully dissolved.

Your sweet vermicelli is ready. Let it cool, then serve.
