Sometimes I like to prepare this simple chicken with minimum ingredients and minimum preperation but yum to have.

Heat oil and fry the chicken first for 5-10 minutes. Take it out and keep aside. Now in the same oil, add the onion, saute it for a minute, add ginger and garlic and saute for another few minutes. Add the chopped tomato and saute and mix, add the salt and Turmeric too and again add the fried chicken, no need to cook Tomato and all first. Throw in Black pepper powder, Chopped cilantro and fresh chilli and cover with a lid and cook on low medium or low flame for about 20-25 minutes.

Stir in occasionally, try and make in a thick bottom kadai or pot or Casserole as we are not going to add water in it, the chicken is going to cook in its own moisture and the Moisture of the onion and tomato. It's a dry kind of preperation,with the masala sticking to the chicken. Once the chicken is well cooked serve hot. It goes well with Dal / Rajma Roti or rice in which a dry kind of side dish will do.
