Prepare all the ingredients

Season the chicken with salt, pepper, all-purpose and mixed herbs. Be generous!! And leave aside.

Add some water to a large cooking pot, then bring to bowl.

Add chicken to the pot

Now add pumpkin or butternut squash and season, salt, pepper, pimento and mix together and cook down for 20 minutes.

Now add onions, spring onions, garlic, ginger, carrots, sweet potatoes, yam and corn, cho cho, ginger, veg stocks then mix and cook for further 15 mins until tender.

Add scotch bonnet and fresh thyme and cook for 15 minutes.
