Karwa Chauth is traditionally celebrated by north Indians. But by watching Bollywood movies I think many women have now started celebrating karwa chauth in India as well as abroad. One of the most iconic scenes of DDLJ, when Simran keeps fast for Raj and Raj too, keeps fasting secretly for Simran has been the most romantic scene ever. And remember that song of Salman and Aishwarya requesting the moon to come out" Chand chupa badal mein" also "Bole chudiyan" of Kabhi Khushi kabhi gam has charted the songs of karwa Chauth.
Well everything apart, as per the Hindu tradition, Karwa Chauth is the most crucial festival for women, especially those who are married. This day begins with a small early morning prayer and proceeds with “Sargi”- a food platter containing the curry, parathas, coconut water, and dry fruits. Women eat sargi after the bath as it prepares them for the whole day of fasting. It keeps them energetic and allows them to stay without food and water the whole day.
I prefer eating light sweets to keep the whole day energetic as heavy sweets bring lethargy to the body, so I choose Rasbhari. I prepare a day before karwa Chauth so I eat a chilled moist Rasbhari to keep me cool and contented the whole day.

Steps

Take fresh homemade paneer and crumble it into small pieces.

Take beetroot and grate it. Now extract the juice from the shredded beetroot by straining through the strainer.

Mix the juice to the crumbled paneer. Now add refined flour and rub with your palm until a smooth texture is achieved. It moderately takes 5 minutes.

When it starts forming like a dough and does not stick to the palm then it is done. Make marble size small balls and keep them aside.

In a deep vessel keep 3 cups of water and 1 cup of sugar to boil until the sugar melts and water starts boiling. Make 1 thread consistency syrup. It should be rolling hot.

Take out in another vessel along with the syrup. Let it cool down to room temperature. Refrigerate it preferably overnight and serve it chilled.
