Ingredients

  1. 2.5 lbchuck roast
  2. 1 lbcarrots, chopped
  3. 1 lbbaby Yukon Gold potatoes, halved
  4. 1yellow onion, chopped
  5. 1-2 stalkscelery, chopped
  6. 4 clovesgarlic, minced
  7. 2 tablespoonsavacado oil
  8. 1 teaspooncoarse ground black pepper
  9. 1 TablespoonKosher salt
  10. 1 teaspoondried thyme
  11. 1 canbeef broth
  12. 2 tablespoonscorn starch
  13. 2 tablespoonscold water

Steps

  1. 1

    The night before cooking, season the chuck roast with the Kosher salt, pepper and thyme

  2. 2

    Heat avacado oil to 400-450 and add in the roast and brown, deeply, for 4-5 minutes

  3. 3

    Add the carrots, potatoes and garlic to the pot. Place roast on top

  4. 4

    Pour in beef broth and set crock pot to low for 8-10 hours

  5. 5

    With an hour left mix cornstarch and water and add it to the slow cooker to thicken the sauce.
