The night before cooking, season the chuck roast with the Kosher salt, pepper and thyme

Heat avacado oil to 400-450 and add in the roast and brown, deeply, for 4-5 minutes

Add the carrots, potatoes and garlic to the pot. Place roast on top

Pour in beef broth and set crock pot to low for 8-10 hours

With an hour left mix cornstarch and water and add it to the slow cooker to thicken the sauce.
