Traditionally the biryani recipes are prepared in big aluminum pot by layering the rice and biryani gravy. once it is layered, then sealed tightly so that the aroma does not escape and is cooked in a low flame.
For this biryani recipe I follow all the traditional steps , only I use a Pressure cooker instead of aluminum pot . This way one can easily make Biryani in less quantity also .

For barista,
Cut onions into thin slices make sure they are almost same thickness.
Heat oil in a pan, add onion slices and fry. Keep the flame on low-medium.
Once they start changing its colour take out half onions that we use with vegetables.
And fry the remaining onions until crisp and golden. - 2
Wash and soak rice for 30 minutes.
Heat 3 cup water in a deep pot add in 1tbsp ghee, brown cardamom, green cardamom, cinnamon, bay leaf, soaked rice and 1/2tsp salt. Cook until the rice cooked upto 90%.
Drain extra water and keep the rice ready. - 3
In a mixing bowl add all the vegetable pieces, paneer cubes, baby potatoes, ginger-garlic paste, chilli powder, 1tsp salt, turmeric, kasmiri mirch powder, biryani masala, Cummin powder and half fried onions. Mix everything together nicely.

In a pressure cooker heat the remaining oil of onion. Splatter sahi jeera and add in marinated vegetables. Stir and cook on low flame until vegetables shrink and masala start releasing oil.
Turn off flame. - 5
Layered cooked rice over the vegetables. Then, on top spread barista (fried onions), saffron milk, coriander leaves, mint leaves and chilli slit.
(This stage You may also add 1tsp kewra water, if you like)
Cover and cook for 12-15 minutes on very low flame. - 6
Let it cool at temperature until the pressure inside the cooker goes down naturally.
Open the lid and fluff the rice carefully with a sharp spatula.
Veg. Dum Biryani is ready. - 7
Serve hot with raita and onion salad. Enjoy 😊.
