Cut the burdock root into long, thin shavings and soak in water. Julienne the carrot. Mince the green part of the green onion.

Pour oil into a large frying pan or pot. Stir-fry the ground meat. (If the pan is too small, it will be very hard to mix when other ingredients are added!)

When it's mostly heated through, add the vegetables and sugar and quickly stir-fry.

Once the vegetables become slightly tender, add the water and seasonings. After it comes to a boil, let it simmer for 2-3 minutes.

Add the okara. Spread it evenly in the pan and mix vigorously. I got carried away and made double the amount--it was really hard to mix.

All done! When you taste it at first, the flavor may be a little bland, but let it sit for awhile and the flavors will absorb and it'll turn out perfectly!

If there's not enough liquid, making it hard to mix, add water to adjust. If you want to add more seasonings, mix with water first and then add them.
