One of my favourite flavour combinations with pasta is pork with fennel and tomatoes. Simple, yet to delicious and morish. Here's how I make mine with ground pork, however at times I'll de-case a few pork sausages and use the meat from those instead.

Ingredients

30 mins
3-4 people
  1. 240 gpenne pasta,
  2. 400 gpork mince,
  3. 200 gtinned tomatoes,
  4. 1red onion, diced finely,
  5. 2large vine tomatoes, diced,
  6. 1 tbsptomato puree paste,
  7. 1.5 tspgarlic paste, or use 3 cloves minced,
  8. 1 tspfennel seeds, ground with mortar and pestle,
  9. 1/2 tbspolive oil,
  10. Salt and black pepper to season
  11. 1 tspsugar,
  12. To serve:
  13. Grated parmesan cheese

Steps

30 mins
  1. 1

    Begin boiling the pasta in salted water according to packet instructions. Whilst that boils add the pork mince to a large frying pan and dry fry whilst breaking it up into small pieces for around 3-4 minutes. Drizzle over the olive oil and add in the chopped onion. Season really well with salt and plenty of black pepper.

  2. 2

    Fry for a couple of minutes then add in the ground fennel seeds, tomato paste and diced tomato. Stir. Add in the minced garlic and continue to fry. Once the meat is browned on all sides, pour in the tinned tomatoes and add the sugar. Stir and bring to a simmer.

    Drain off the pasta reserving a bit of the pasta water then pour it in with the sauce. Stir well to coat the penne. Remove from the heat. Grate over parmesan, season with more salt & pepper if desired and serve. Enjoy!

Great recipe! Tried it as is and with a bulb of fresh fennel chopped and added just after the onion (reduced the fennel seeds to just a few for extra flavour) and both are fantastic. It’s become a regular on our meal plans. Fussy child with a clean plate speaks volumes!! Thank you for sharing
