Sift the flour into the mixture bowl, add cold butter and use you fingertips lightly nib until mix it well. Add the beaten egg and watermelon rind jam. Gather the dough into the ball. Turn it on the flour surface. Roll the dough gently to 2 cm thick, cut it with the round cutter. Place on the baking paper on baking tray. Brush the top with egg glaze.

Preheat the oven @ 190 C & bake for 20 mins.
