It is easier, tastier and quicker to make your own layered puff pastry dough than thawing out store bought filo dough. And you can use your own natural ingredients, no preservatives or additives or palm oils. And fresh! I use this dough to make fluffier pie crusts, make other desserts, bake meat and chicken in crust, make baklava and spinach pie.

Cooking Instructions

One hour
  1. 1

Make the dough: this recipe is very precise. Use a kitchen scale. Put 250 grams all purpose flour with 1 teaspoon of seasalt in the mixing bowl, stir, make a depression in center of mix, pour in 4 tablespoons olive oil, 1 tablespoon red vinegar, mix till crumbly.

  2. 2

With mixer running, drizzle 100 milliliter water in the bowl till dough forms into ball. Add water teaspoon by teaspoon if your flour needs more water.

  3. 3

Roll doughball firm and round, wrap in shrinkwrap, let rest for an hour on kitchen counter.

  4. 4

Make as many smaller dough balls as you want layers in your crust. Roll out on floured board, as thin as you can. The secret to the elasticity in this dough is the vinegar and the quality of the olive oil. Brush melted butter with or withour honey on top of each layer of dough as you stack them in your baking form. Spray bottom of baking dish with olive oil. Bake 30 minutes in preheated 400F degree oven. Done!

I teach people at the farmers market to grow small scale fruits and vegetables. I learned growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish from my farmer grandparents and parents. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste. These are the global, organic and vegan family recipes we use.
