I came up with this healthy and easy soup.

Ingredients

4 servings
  1. 1/2pack Shimeji mushrooms
  2. 1/2pack Enoki mushrooms
  3. 1/2pack King oyster mushrooms
  4. 1/4Onion
  5. 1Consomme soup stock cube
  6. 1 tspOlive oil
  7. 1 tspCooking sake
  8. 400 mlWater
  9. 1 tspUsukuchi soy sauce
  10. 1Salt and pepper
  11. 1optional Parsley, grated cheese

Cooking Instructions

  1. 1

    Thinly slice the onion and cut the mushrooms into bite-sized pieces.

  2. 2

    Heat olive oil in a pot and sauté the onions and mushrooms. Add the cooking sake and when the mushrooms are soft, add water and consomme.

    Bring to a boil and cook for 1-2 minutes. Add soy sauce and pepper and adjust the seasoning with salt if necessary.

    Sprinkle parsley and grated cheese on top, and it's done!
