Steps

Make 4 slits in each egg plant and stuff with green chillies and garlic cloves.

Place the eggplants on fire and cook from eacgmh side till cooked.remove from flame peel mash and keep aside.

Now crush the burnt garlic cloves and green chillies in a mortar n pestle.

Heat both oils in a wok add mustard and cumin seeds.Fry for 30 seconds add chopped onions.saute for 1minute then add garlic and chilli paste along with chopped ginger.

Fry for 2 to 3 minutes then add chopped tomatoes and spices keep cooking on low medium flame until soften.

Add mashed eggplants stir and sprinkle chopped green chilies and coriander.Turn off the flame.

Dish it out and enjoy with chapati or plain rice.
