Skewer a sausage lengthwise through the middle and make parallel cuts until the knife reaches the skewer. Discard both ends of the sausage, then carefully bend it so that its ends touch each other.

Place the bent sausage on a tray. Fold the sausage's margin and fit it into the sausage’s enlarged cuts using a toothpick.

Add 2 tbsp butter and place the flowers on a pan and light fry on one side. Fill the empty space in the middle of the bent sausage with 1/2 tsp shredded mozarella cheese, egg yolk, season with salt and pepper.

We at home prefer cooked egg here and so (you can also keep the yolk runny) turn slowly upside down. Sprinkle some freshly chopped coriander leaves and spring onions and serve with ketchup.
