These were do tender they melted in our mouths. I have seen many methods I think this is the best. People have used dishwasher, washing machine in gentle cycle, put in a big overnight so dirt will settle. I have seen them hung out in the rain on a clothes line. The washing machine and dishwasher are a major cleanup. Gritty sand in the other methods except the rain. It's just the birds and critters eat them if you leave out to long.

Look the greens over for worms and yellow splotches. Remove leaves from stems. Mix 3 quarts water, vinegar, salt, and sugar. Bring to a bowl.

Wash collards again without stems. Add pork skin to instapot or regular pot. Bring the brine to boil add in the collards in batches and blanch till wilted.

You will see dirt and particles in water of sink. Transfer blanched greens to cooking pot.

Drain and clean sink. Take blanching water and add to cooking pot. Cook till tender. Take stems and feed to cows, chickens or other livestock. Also can be used as mulching/compost. I cooked my greens in instapot one hour. Serve I hope you enjoy!!!
