Clean the prawns and prepare all the necessary ingredients.

Heat the oil in a wok or large skillet over medium high heat. Add onion, lemongrass, chopped chillies and curry leaves. Sauté for a minute. Add turmeric and curry powder. Stir well.

Lower the heat. Add the prawns and few tablespoons of water if necessary. Keep stirring until it's cooked through. Add seasonings. Stir again. Taste and adjust seasonings to your liking. Remove from the heat and garnish with chopped scallions. Serve immediately over rice.
