Defrost the salmon and cut into bite-size chunks. Prepare other ingredients.

In a nonstick sauce pan, heat vegetable oil with medium heat. Stir-fry salmon for 1-2 min. Beware not to overcook. Before you finish, add a little bit of soy sauce. Mix well. Set aside.

In the same pan(without cleaning), use medium-high heat. Sautéed onion for 2-3 min until tender and translucent. Then, add garlic and stir-fry for 1-2 min until they turn golden-brown. Next, Add egg and mix well with other ingredients. Avoid overcook.

Add cold rice and mix well. Season with soy sauce, oyster sauce and black pepper. Finally, sprinkle chopped scallion just before you turn off the oven. Transfer to bowl or plate and serve.
