Christmas Special: Goan Perad- (Guava Cheese)

This one’s a traditional Christmas special dessert recipes from the very land/region-
Very easy to prepare, using minimal ingredients & is ready just in a jiffy- The only time consumes in its Resting Time before slicing it up nicely & evenly !!!
This very simple decadent dish can be well prepared regardless of the Christmas event as well for any house get togethers or parties…that’s how, it’s done in the very land too

First Up: Well Wash & roughly cut up the guavas on skin (discard both the edges though a bit)- Pressure cook the same with sufficient water (RT) & to just one or two whistle/s- Strain & make a smooth & thick purée out of it- Pass this purée through the sieve for about 2-3 times (you can either choose to discard the seeds of it or keep it as per your own preference)- Just ensure that, the guava purée is absolutely lump free & smooth

Next, heat up a pan/pot/vessel over the medium flame- Add in some butter to it initially to start on with, swirl the pan once to coat nicely with the butter- Pour into it this freshly prepared Guava mixture & keep on stirring continuously until it starts thickening up, time to add in the sugar to this mixture now while stirring continuously until the entire moisture from the sugar is absorbed & it’s quite lumpy/doughy kind of substance at this point

Mix in the lemon juice to it now as well & again, keep stirring until it reaches the correct doughy & sticky consistency by now-
Finally, good time to add in the sugar to this now & mix everything well together until nicely combined and well blended & it’s added a sheen to the texture of this lumpy mixture now - 4

Turn off the flame & it’s good time to pour it into the prepared dish/tray- Even its edges, corners & top evenly & nicely until it’s having a fine smooth silky texture all along- It might happen so, while smoothening its top & edges the spatula (silicon), might tend to stick to the mixture often- The only remedy is to grease it quickly & with quick hands as well, we need to finish doing this process because, as it starts cooling down it’d tend to stick even more

Once that’s done wrap it with a cling film/wrap or even a aluminium foil without touching the mixture top inside the tray/dish- Refrigerate it for at least 6-8 hrs time or overnight is as always the best 👍🏻 Post the chilling & setting time, slice it up nicely according to your own choice- Shapes & Sizes-
