Grandma's Stewed Okra
A dish my late grandmother used to make when we were kids, and we would clean our plates!
Cooking Instructions
- 1
Clean, wash, and quarter the potatoes.
- 2
Finely chop the onions, leek, and garlic.
- 3
In a pot, sauté the onions, leek, potatoes, and garlic in the oil, and finally add the okra directly from the freezer.
- 4
Add the tomato sauce, salt, pepper, bouillon cube, parsley, and 2 cups of water.
- 5
Boil for 30 minutes until the water is absorbed and only the oil remains.
- 6
It's very important not to stir continuously and vigorously because okra is a very delicate vegetable and can disintegrate. Usually, when we want to stir the okra, we shake the pot in circular motions.
- 7
Our dish is ready to enjoy on its own or served with feta cheese, yogurt, grilled or fried chicken, pork or beef steak, any schnitzel, or even eggs. Okra goes with everything!

A tip for extra flavor is to fry the potatoes until half-cooked and then sauté them in the pot with the other ingredients.

Chicken and Okra stew Chicken and Okra stew
A southern U.S. favorite with a few twists: I serve it with lebanse style rice, and the spices have a twist. I added cinnamon and turmeric, which are not commonly used in the US for savory dishes! Also- the okra are kept whole, which keeps them from becoming slimy, and they stay tender. An easy, personal favorite, I hope you enjoy.Tips:-Put your onion in the freezer 15 minutes prior to chopping. Helps with tears :-)-Dont overcook chicken!-There are a lot of ingredients, so rather just imagine it in stages: brown chicken, cook veggies and spices, add liquids and simmer, cook rice, and add okra and chicken.
