Fried Okra

This is the only thing that I will fry these days. #GlobalApron 2024

Ingredients

30 minutes
2 servings
  1. 2 cupsfresh okra, sliced into 1/2 inch slices
  2. 1/2 tspeach salt and pepper or to taste
  3. 1 cupself rising corn meal
  4. Favorite cooking oil

Cooking Instructions

  1. 1

    Mix okra with corn meal, I use a bowl with a lid to cover and toss.

  2. 2

    Using an iron skillet, heat about 2 inches of oil, I use avocado oil.

  3. 3

    Use a slotted spoon to scoop, knock off excess meal and place in hot oil. Fry in small portions to keep it from getting mushy.

    Fry until golden and crispy. Season to taste. Serve hot/warm.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
