Puff pastry fresh cream cake

Remove pastry fro fridge 10 minutes beforehand.
Preheat oven to 160 degree Centigrade
Take one pastry sheet and cut in a round shape. (I have made a small cake so used one pastry sheet) Prick with a fork and transfer on a baking sheet. Brush it with milk. - 2
Take the second sheet and cut another round. Cut in 8 equal segments and prick it with a fork. Bake for 16 to 18 minutes or until golden. Let it cool completely.
Beat cream with sugar and lemon juice on medium speed. Beat until firm peaks form. - 3
Take 2 tablespoon of mincemeat and microwave 1 minute. Let it cool and spread it on the first layer. Cover generously with cream on top and place each triangle segment on top. Decorate wit fresh cream or dust some icing sugar. Enjoy, immediately for crunchy texture. You can refrigerate but it will be less crunchy.
