Ingredients

  1. 1pumpkin (about 6 1/2 lbs or 3 kg)
  2. 2 1/4 lbsfine bulgur (about 1 kg)
  3. 2onions, finely chopped
  4. 1small bunch each of fresh mint and basil
  5. 3 tablespoonssalt
  6. 1 teaspooncumin
  7. Filling:
  8. 3 1/2 ozfinely ground beef (about 100 grams)
  9. 3large onions, chopped
  10. 1 tablespoondried mint
  11. Cumin
  12. 7-spice blend
  13. 3 1/2 ozground walnuts (about 100 grams)
  14. 1 tablespoonpomegranate molasses
  15. 2 tablespoonsolive oil

    Cut the pumpkin into pieces and boil for 15 minutes.

    Soak the bulgur, then add the drained boiled pumpkin to it.

    For the filling: Combine all the filling ingredients in a pan and cook over heat for 5 minutes.

    Once all the components are ready, shape the kibbeh balls and prepare them for frying.

    Fry the kibbeh until golden brown.
