Ingredients

  • 2000g/2 Kg peeled Maris Piper Potatoes
  • 400 gCabbage
  • 200 gtrimmed Celery (3 or 4 sticks)
  • 100 gtrimmed Leek (One Leek)
  • 2large Onions
  • 10 clovesGarlic (Whole Bulb Garlic)
  • 2 tsp.Coarse Black Pepper ground
  • Coarse Sea Salt grinded
  • 4 tbsp.Olive Oil

    In a cauldron saucepan (very large saucepan) boil whole Cabbage with outer Cabbage Leaves removed and boil Celery sticks and the One Leek,or 2 Leeks if you have more than One Leek - boil briskly for 30 minutes and then drain the hot boiled water away - keep cooked Cabbage, Celery and Leek in a large mixing bowl.

    Now use the Cauldron saucepan again and boil the peeled potatoes for 30 minutes, drain the hot boiled water away - through a Colander Sieve maybe and then set aside. Can leave the cooked potatoes in the Cauldron saucepan.

    In a large non-stick Wok fry chopped onions gently in Olive Oil for about 10 minutes and then add thinly sliced Garlic too the Wok - fry on the highest heat hob for One minute, can add the Black Pepper and some grinds of Sea Salt or a teaspoon of Coarse Sea Salt.

    Then add the cooked Cabbage, Celery and Leek, plus Potatoes and fry for 20 minutes with the other ingredients - keep stirring with a Plastic Spatula or Wooden Spoon and add some more grinds of Coarse Sea Salt or One, or 2 teaspoons of Table Salt.
