A favorite appetizer at a local restaurant. I have been tweaking this for many iterations to get the flavor just right!

Preheat oven to 350 degrees.

Place the Brussels sprouts in a medium saucepan, cover with water, and place on high heat for 8 mins. You want the Brussels crisp and bright green, but not soggy. Drain immediately.

While the Brussels are cooking, cook the bacon in a large saucepan until ALMOST crisp - aim for 95% cooked.

Add the syrup and vinegar and stir into the bacon drippings, scraping up any browned bits. Add the Brussels, and stir to make sure all are coated.

Line a baking sheet with parchment paper, and arrange Brussels in a single layer. Bake 10 minutes.

Move oven rack to high position, heat broiler to high, and broil Brussels for 2-5 minutes, depending on the level of blackness you want. Check frequently - this part goes fast!

Season to taste with salt and pepper. Enjoy!
