The Best Lentils in the World in a Pressure Cooker

Cooking Instructions

Start by sautéing the chopped onion and garlic in the pot

Add the paprika and sauté with the onion and garlic

Add a few tablespoons of tomato sauce

Remove the pot from the heat and add the lentils with the water (I pre-boiled it to speed things up) covering about 2 inches above

If you want more broth, add more water

Add the chopped potatoes and bay leaf. Season with salt and pepper. Stir everything and close the pressure cooker

Turn the heat to high until it starts to boil, then reduce to medium heat for 20 minutes

For best results, let the steam release naturally. If you're in a hurry, you can open it and force the steam out; they'll still taste good, though there's a noticeable difference

My first attempt and turned out great. I did not measure anything, as usual, but I tried to include measurements here. I didn't have any carrots. But about 3 good sized carrots chopped nicely would do. Or some frozen. I just used ingredients I had on hand. Do as you like. Throw in what you please. This soup amazed me. So happy to share this. I made this a lot when I lived in France All it takes is to simmer some basic ingredients. It goes well with bread and wine You can also serve it with brown rice.You can also use panchetta or other cured meat instead of bacon (if it's quite salty, adjust the amount of salt.)
