Flavoured Akamu

Akamu, eko, koko or pap as fondly called is a staple breakfast for Nigerians. It is mostly taken on cold - weather mornings if served hot.
It can be taken by infants, children and adults. It is very rich in carbohydrate. It can be taken alone or supported by proteins such as milk, akara, moimoi or beans.
I decided to prepare it this morning as breakfast to chase away the cold harmattan.

I decided to prepare it this morning as breakfast to chase away the cold harmattan.
Steps

Measure the cornmeal in a clean ceramic bowl.

Add little cold water and stir until you have a smooth consistency as seen.

Add a teaspoon of pineapple flavour extract (you can use the flavour of your choice).

Boil a cup of clean water.

Add the boiled water and stir as you add water until it thickens and colour turns to custard yellow.

Cover with a lid for 2 minutes.

Add sweetener to your taste if necessary. I drizzled some honey on it.
