Blackeyed Pea Patties from the South

So many different recipes for this here is one I want to share with yall. It's simple to make using leftover blackeyed peas that's been cooked with ham. Some use peppers, bacon, corn, Lima beans and so on. Some use cornbread mix instead of flour. Some use eggs or applesauce to help bind the patties. Well here is mine, just simple leftover blackeyed peas from New Years Day dinner.

Mash the peas. Dice the onion.

Add onion and flour to the mashed peas. Form the patties. Start melting the butter.

Add the oil and allow to heat. Carefully add some of the patties to the frying mixture. Move the patties to a paper towel to absorb excessive amounts oils. Becareful when turning and moving to towels, they are a bit fragile.

You may need more then one plate with towels. Serve I hope you enjoy!!!!!
