When there was nothing left at home except leftover rice and eggs, I turned that bowl of cold rice into one of my all-time favorite dishes. I love the aroma of golden, crispy garlic in fried rice, topped with a few sunny-side-up eggs for a delicious lunch.

Mince the smashed garlic. Heat oil in a skillet, add the garlic, and sauté until fragrant and golden. Add the rice and stir well. If using, slice the sausage and mix it into the rice. When the rice grains start to dry out, add 2 teaspoons seasoning powder and 1 tablespoon salt, stirring to combine. Finally, add the bean sprouts, reduce to medium heat, and press the rice down so it gets drier, then stir again. Sprinkle with a little black pepper for extra flavor.

Crack and fry 2 eggs at a time until the edges are golden. Serve the fried rice on a plate, top with sunny-side-up eggs, and add some fresh vegetables on the side if you like.
